Food composition and satiety (Saciedad)

Foods commonly eaten in Spain and Latin America with their composition per 100 g as eaten (energy, protein, carbohydrate, sugars, fiber, fat, saturated fat, water, five micronutrients and five fatty acids), an estimated satiety score from 1 to 5 with the criteria behind it, the Holt et al. (1995) satiety index when the paper tested the same food, a typical serving and practical tags for people taking a GLP-1 medicine. Every record cites the exact USDA FoodData Central entry, or the composition table or paper, its values come from.

How they were built

This is the same data behind the site's food pages, tables and tools, under the same rules I explain in the methodology. Every record lists its primary sources with the date they were accessed and carries the date of its last review. Values that cannot be backed by a source are left empty; they are never estimated or made up.

Only records published on the site are included; drafts are left out. The files are rebuilt every time the site is updated, so they always match what the pages show. The version of each dataset is the date of the most recent review of its records.

Field names are in English; reader-facing text is in Spanish (fields ending in Es) or English (fields ending in En). Numbers use a decimal point. The CSV files are UTF-8 with a BOM so Excel reads accented characters correctly. The files live under the Spanish address /datos/ and are the same for both languages.

How the satiety score is calculated

The satiety score (satietyScore, 1 to 5) is our own estimate from the values per 100 g as eaten. It starts at 1 point, adds or subtracts the criteria in the table and is then clamped to 1–5.

In Holt et al. (1995) and later work, the strongest predictors of short-term satiety per calorie are low energy density, protein, fiber and water or volume; liquid calories are less satiating than solid ones. The rule is deliberately simple: it is an estimate, not a measurement. Where a Holt index exists for a food, it is the better number.

Data tag thresholds: high protein, 10 g or more per 100 g and 6 g or more per 100 kcal; high fiber, 3 g or more per 100 g; high energy density, more than 300 kcal per 100 g; low energy density, 100 kcal or less per 100 g; hydrating, 85 g of water or more per 100 g.

License

All three datasets are published under the Creative Commons Attribution 4.0 International license (CC BY 4.0). You may use, copy, share and adapt them for any purpose, including commercial use, as long as you credit the source, link the license and indicate whether you made changes.

The license covers the compilation, its structure, the satiety score, the tags and the summaries written for this data. The rest of the site (guides, articles and design) stays under the terms of the legal notice.

The upstream sources keep their own terms and should be cited too when you use their values:

  • USDA FoodData Central, for the composition of almost every food.
  • The composition tables and papers cited for the foods FoodData Central does not cover.
  • Holt et al. (1995), for the satiety index.
  • EMA, FDA, AEMPS and the other regulators, for label data.
  • The journals that published each trial, for its results.

Every record lists its exact sources, so you can cite them straight from the files.
