Directions

  1. Cook the onion in the oil in a pot over low heat for 5 minutes.
  2. Add the pumpkin and chayote, stir for 2 minutes, and pour in the broth.
  3. Simmer gently for 20 minutes, until the vegetables are tender.
  4. Blend until very smooth and season with salt, pepper, and cumin.
  5. Toast the pepitas in a dry skillet for 2 minutes, stirring.
  6. Serve each bowl with a big spoonful of yogurt and the pepitas on top.

Why it is filling

Pumpkin and chayote are mild vegetables with lots of water and some fiber, and blended they make a light soup you eat slowly that also helps you stay hydrated. On its own the soup is low in protein; nonfat Greek yogurt and pepitas raise it and add texture. It is a warm dish with no beans or cruciferous vegetables, so it usually sits well on days with nausea or bloating.
