Ricotta (requesón) recipes: sweet and savory, with protein
Part-skim ricotta, sold as requesón in Spain and much of Latin America, is a mild, creamy fresh cheese that needs almost no chewing and gives you protein in a small volume. It works sweet, with fruit or a thread of honey, and savory, on toast or baked with egg whites and spinach. If you cannot find it, cottage cheese is the closest swap, with a little less fat.
